Minnesitaly for Bach Society of Minnesota

Yesterday, 9th March 2024, we had the great pleasure to setup a buffet style party for the Bach Society of Minnesota.

The musicians and the hosts of the event were awesome and we were lucky to be there hearing and enjoying the marvelous music of Johann Sebastian Bach.

The music was great, classic, intimate, full of emotions and truth, as is all the food freshly prepared by Chef Milly.

A five stars cooking class with five stars people

Last week we were honored to hold a very exciting cooking class with a group of special people.

Thanks to Kami, Kenna, Kim, Rita, Sally and Vivien for the wonderful experience that brought us together.

Bolognese sauce

Bolognese sauce, also known as “ragù alla bolognese” in Italian, is a meat-based sauce that originated in the city of Bologna, in northern Italy. The sauce is traditionally served with tagliatelle pasta, but it can also be used in lasagna or with other pasta dishes. In Bologna there are also small coffee shops and bar that serve gourmet sandwiches with a reduced Bolognese sauce.

The origins of Bolognese sauce can be traced back to the 18th century, when it was originally made with a mix of beef and pork, along with vegetables such as onions, carrots, and celery. The sauce was then simmered for hours with wine and tomatoes, resulting in a rich and flavorful sauce.

Over time, the recipe for Bolognese sauce evolved and became more refined. In 1982, the Accademia Italiana della Cucina (Italian Academy of Cuisine) officially registered the recipe for Bolognese sauce, specifying the exact ingredients and cooking method.

We just had a cooking class with 11 people and it was a great success with a lot of fun for everyone.

We all had fun and ate delicious Tortelli closed with the hands of each participant.

Why is eating Pasta good for you?

The “Trattoria Way”

In Italy, where the density of restaurants is unparalleled in the world, there is a particular type of restaurant called trattoria.

A trattoria is essentially a family-run or family-derived restaurant, which often offers the possibility of having dishes served in sharing mode.
Unlike a classic restaurant that serves the diners each with his own individual dish, in a trattoria, when more than one portion of a specific dish is ordered, the diners are served with large serving dishes from which they can draw personally by managing the desired quantity .

Another key aspect of the trattoria and its working method lies in the fact that the dishes offered are almost exclusively regional dishes, i.e. dishes of the local tradition, where local in Italy often means an area of the territory enclosed within a few miles.
